Ayush Bathwal was studying and traveling in the United States when he experienced the vibrant Third Wave coffee movement sweeping through cities like Seattle, San Francisco, and Portland. Neighborhood roasteries celebrated coffee as an artisanal craft similar to fine wine—tracing beans back to individual farmer micro-lots and dialing in custom roast curves. Returning to India, Ayush and his co-founders Sushant Goel and Anirudh Sharma realized that despite India being a historic coffee grower, metropolitan Indian youth were spending time in aging commercial chains that served over-roasted, bitter beans drowned in sugary syrups.

Act II: The Genesis Bet & Counter-Intuitive Architecture

In 2016, the founders opened the first Third Wave Coffee Roasters cafe in Koramangala, Bengaluru. The bet was counter-intuitive: in a country historically addicted to sweet instant chicory tea and coffee, they installed massive Diedrich roasters right in the center of the cafe. Customers were invited to watch green coffee beans transform into golden roasts, engage with passionate baristas at dedicated manual brewing bars, and taste pour-overs, Syphons, and Aeropresses.

Third Wave Coffee struck an immediate chord with Bengaluru's burgeoning tech and startup community. The cafes became the unofficial boardrooms where founders pitched pitch-decks to VCs over single-origin cold brews.
